Every week, Janet posts these Friday Fill-in thingies and, although I always read those posts, I usually don’t fill in the fill-in, but this week I think I will. (My additions to the sentences are in bold.)

7. And as for the weekend, tonight I’m looking forward to going out to dinner, tomorrow my plans include avoiding crowds and reading my little heart out, and Sunday, I want to read the Sunday paper, do the crossword puzzle, avoid more crowds!

So, as you may have guessed from item 5 above, yesterday I did something I rarely do - I made cookies! I don’t know why. I just felt like baking. Here’s a couple of pans full of dough balls, waiting their turn to be transformed into sweet chewy goodness via a little time in the food tanning bed oven.

May I just say that whoever invented parchment paper for baking ranks way on up there on my list of People Who Deserve to Have Good Things Happen to Them. It’s soooo much more fun to bake when I don’t have to clean cookie sheets between batches!! Parchment Paper Inventor doesn’t quite edge out my favorite (the Mute Button Inventor, who I sincerely believe to have been a saint) but s/he is way on up there on my list of Good People.

Here are some cookies who have already had their day in the sun time in the oven.

Mmmmmmm….Cookies!

The basic recipe is a pretty typical oatmeal cookie recipe, and sometimes I make the traditional, relatively unjunky (for a cookie!) oatmeal raisin version. I also sometimes make a really yummy orange/spice variation. But yesterday I didn’t have any raisins, or most of the stuff I needed to do the orange/spice ones, so I decided to make the extremely junky, but sooooo tasty, chock full o’ stuff version.

In case anyone wants to make a batch this weekend, here’s the recipe, with my two variations:

Deb’s Favorite Oatmeal Cookies

3/4 cup shortening
1 cup firmly packed brown sugar
1/2 cup granulated sugar
1 egg
1/4 cup water
1 tsp. vanilla (the real thing, please!…not that icky imitation stuff made from wood pulp…ugh!)
3 cups uncooked oats (I use the quick-cooking kind because I like the finer texture, but if you want chewier cookies the old-fashioned ones work too)
1 cup all-purpose flour
1 tsp. salt
1/2 tsp. baking soda
1 tsp. cinnamon
1 cup (more or less) raisins

Preheat oven to 350F. Beat together shortening and sugars until fluffy, then add egg, water, and vanilla and beat until creamy and smooth. Combine dry ingredients, then add to sugar mixture a little at a time, mixing well. Fold in raisins (I like the golden ones!) or any other extra Stuff (see variations below). Drop by rounded teaspoonfuls onto a parchment paper-lined cooking sheet (grease the sheet if you don’t have parchment paper, and then go buy some before the next time you bake! seriously!!) and bake for 12 - 15 minutes. (Less time will give you a softer, chewier cookie, which is what I like. If you like yours crispy-crunchy [*cough*freak*cough*] then go for the longer time.) Makes around 5 dozen cookies.

Variation One: Relatively UnJunky Orange Spice Craisin Oatmeal Cookies

Leave out raisins
Instead of 1/4 cup water, add 1/4 cup orange juice
Add 1/2 tsp. orange extract
Add 1/2 tsp. orange zest
Add 1/2 tsp. ground cloves (optional, but I like it)
Increase cinnamon to 1 1/2 tsp.
Add 1 cup (or a little more…I don’t measure) dried cranberries

Variation Two: Totally Junky but Very Yummy Chock Full o’ Stuff Cookies

Leave out raisins (or leave them in if you think they’d taste good with the other stuff…your cookies, your rules!)
Add 1/2 cup each (more or less…I don’t measure this part):
~dark chocolate chips
~toffee chips
~cinnamon chips
~sweetened flake coconut

Enjoy! And don’t forget, these are perfectly acceptable to eat for breakfast because they are Oatmeal cookies! :-)

    What a great thing to do with bad tomatoes (and other fruit, I imagine)! I’m going to do that same and see what happens :-)

    I like to add butterscotch chips to my oatmeal cookies!

    Tomatoes? I didn’t see tomatoes in this post.

    Love the cookies you’ve got her (especially the fully loaded variety, and I could go for the butterscotch chips Janet mentioned also). AS A MATTER OF FACT, I pulled out some frozen cookie dough last night to let it thaw out in the refrigerator for baking tonight (Special K with coconut). As Alton would say “good eats” to you.

    Deb~ I have not yet had breakfast, so I will be right over to enjoy some of those oatmeal cookies and some coffee!!! he he ;-)

    You know what I add to my oatmeal cookies?
    You can find them in the raisin section, Fruit Bits. It is a variety of dried fruit bits - golden raisins, apricots, apples, cherries, dark raisins, cranberries, and possibly one or two more that I can’t remember. Let’s just say, this makes some damn fine oatmeal cookies!!!!

    On the other hand, cherries added to regular choc chip cookies is to die for!
